General trends and current developments in food tourism and the contribution of local and specialised products to sustainability are examined and discussed.


Managing Food and Beverage Operations

The seminar topics include: Managing food and beverage operations in terms of margins and productivity; health & safety procedures; employment practices and training; customer profiling; marketing & promotion; current trends; supplier and stakeholder group management; and IT tools.


Industry Relevant Research and Experiential Learning

Date: May 10th 2017

Location: Bosnia and Herzegovina

The seminar begins with a focus on industry relevant research then reviews hospitality and tourism hot topics, current issues and future challenges; it introduces various types of hotel and tourism industry data that are available for free of charge from the STR SHARE Center. Options to merge third party data such as survey results with performance data are explained and examples of industry relevant research from leading academics are demonstrated.  There is a brainstorming session where delegates can discuss their personal training and research ideas and needs. Ways to increase industry relevance including utilisation of student projects to provide hands-on experience working with industry data and options to personalise student projects are explained. Various industry relevant training programmes are reviewed including the application exercises that help to apply training content. Attendees participate in several sample activities. 


Food Tourism: Trends and Developments

Location: Bosnia and Herzegovina 

The seminar includes: Food, restaurant, menu and dietary trends; food culture and society; WRAP (waste reduction action plan); allergies and allergens; product labelling and cross-contamination in kitchen/service areas; food standards; legal and safety issues; and innovative products.


Management and Marketing of Visitor Attractions in Practice

Date: April 6th and April 7th 2017

Location: Montenegro

Management and Marketing of Visitor Attractions: The role of visitor attractions in tourism, the visitor attraction product, the visitor attraction market and the marketing concept of visitor attractions are examined and discussed using  local and national examples.

Management of Visitor Attractions in Practice: The focus is on human capital management; organisational, cultural and legislative issues; ethical challenges; managing quality and change; and planning for the future using international examples.

The seminar includes: Hotel Industry Analytical Foundations; Hotel Maths Fundamentals; Property Level Benchmarking; and Hotel Industry Reports.   Attendees learn foundational metrics, definitions, formulas, and methodologies that are used by the hotel industry.  Benchmarking concepts and techniques are explained.  Participants learn how to "do the maths" and interpret the results, identifying areas of improvement for a hotel or market.  They practise analysing various types of hotel industry data and review the most poular types of industry reports.
